Kids… they are the strictest judges! Honestly, when I cook for my children, I worry as much as a chef does when presenting a revised menu in a restaurant. Many mums would agree that the stress which we face while preparing food for our little ones is similar to that of Michelin chefs!
Today they’ll eat it, but tomorrow they won’t. Today they want to eat something hot, tomorrow they prefer something cold. They choose their food according to colours and sizes. That’s why it’s so difficult to come up with a proper “feeding” strategy- no matter what happens, kids always change the rules of the game.
Even after these struggles, we are highly determined to give them the best of food. Our enthusiasm and creativity knows no bounds!
I enjoy experimenting with the dishes I prepare for my boys, however, I always have a number of simple, tried and tested recipes reserved for emergencies. Today I’m introducing two favourite recipes of our family – I hope your kids will like them too. If not, don’t give up – just keep on trying, we’re on the right path!
I’m not going to go into details about the advantages of coconut oil, as I’m sure everyone is aware of them. I consider myself very lucky that my children don’t mind its rather particular taste. I add it to porridges and smoothies, and I even fry things using coconut oil. Many children love strawberries, so even if your kids don’t like the coconut oil, its taste can easily be hidden by some strawberry sweetness.
Makes about 150 grams of fresh strawberry spread
- A handful of ripe strawberries
- 50 grams of coconut oil (soft, not liquid)
Crush the strawberries with a fork or masher, mix in the oil and add a bit of honey. Mix everything thoroughly, until you end up with a red-white mass with lumps of coconut oil. If you want to get a smoother texture, use a blender. If the mixture becomes too runny, put it in a cool place and let it sit until it becomes more solid.
